1 9 inch piecrust
1 1/4 cups peeled and grated carrots
3/4 cups sugar
1 1/2 cups evaporated milk
3 large eggs, beaten well
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 teaspoon lemon extract

Directions:
Directions:
Preheat oven to 425 degrees.
Combine carrots, sugar and milk in a large bowl.
Add eggs.
Mix thoroughly.
Add nutmeg, cinnamon, salt, lemon extract and blend well.
Pour filling into crust..
Bake at 400 degrees till knife inserted in center comes out clean.
Cook 30 to 45 minutes.
Let cool.
