2 C milk, scalded
2 T butter
2 T sugar
1 tsp. salt
1 pkg active dry yeast
1/2 C lukewarm water
4 C rye flour
2 1/2 C whole wheat flour
2 T caraway seed

Directions:
Directions:
Pour scalded milk over butter, sugar and salt in a large bowl; stir and cool. Dissolve yeast in lukewarm water. Add softened yeast and 3 cups rye flour to milk mixture. Beat thoroughly, beat in remaining rye flour. Cover and let rise in warm place until doubled in size. Turn onto well floured surface. Knead in whole wheat flour and caraway seed. Knead until dough is smooth. Divide dough in half and shape into 2 round loaves. Place round loaves in greased round pans. Cover and let rise in warm place until doubled in bulk. Bake at 450º and bake 5 minutes; reduce heat to 350º and bake 40 minutes longer.

Makes 2 round loaves.
