4lbs ground turkey
3 tbsp olive oil
3 eggs
1 cup milk
½ cup finely chopped celery
1½ cups finely chopped onions
½ cup chopped green onions
2 tsp tabasco
1 finely chopped bell pepper
2 cloves garlic
½ cup ketchup
4 tbsp Dijon or yellow mustard
1 tbsp Worcestershire sauce
8 slices bread
4 tsp salt
2 tsp black pepper
1 tsp chili powder
1 tsp red pepper
½ cup parsley
1 tsp cumin
1 tsp thyme

Use a large skillet to for the veggies with your 3 Tbsp olive oil for 5 minutes over medium heat covered. Stir in milk, mustard, Worcestershire, tabasco, and ketchup. Bring to a boil, and reduce to a simmer. Stir in the bread, and continue to stir until the mixture has the consistency of oatmeal. Spoon into large bowl, and cool in the refrigerator for 20 minutes.

Preheat the oven to 350 F. Remove the bowl from the refrigerator, and add the ground turkey and eggs. Mix together all the remaining spices and parsley in a small bowl and sprinkle over meat. Squeeze and knead the mixture with your hands until all the elements are well blended. Do not overmix or the meat loaf will have a mealy texture.

Divide the mixture into 2 equal parts, and place each in a 9X5x3 inch loaf pan. Tap the pans several times on the work surface to pack the meat and eliminate air pockets. Place the pans on a cookie sheet to catch any juices that spill over, and bake for 1 Hour. Alternatively you can shape the 2 loaves free hand in a large baking pan to measure 2 inches high, 5-6 inches wide, and 10-12 inches long. Bake for 1 hour. Remove the loaves, place on a platter, slice, and serve.
