2 tsp. mustard
1 tsp. salt
1/4 tsp. -1/2 tsp. black pepper
8 c. potatoes (cooked and cubed)
4-5 boiled eggs
1 c. (or one small/med.) sweet yellow onion
1 c. chopped and/or diced celery
1 c. sweet pickle relish

Directions:
Directions:
1. Boil your potatoes. Not too long, about 2/3 of the way done, so that they are not mushy like mashed potatoes.

2. When step one is complete, drain potatoes, and cool completely.

3. After cooled completely, add in the other ingredients and GENTLY stir together.

4. Chill until ready to serve.

5. Salt, onion, celery, mustard, mayo, etc. can be adjusted for flavor.
