10-12 boneless skinless chicken tenders
1 1/2 c. soy sauce
1/2 c. light brown sugar
3/4 c. white sugar
1 c. water
1 can of pineapple rings plus 1/2 c of the juice
1 tbsp of chopped green onion
1 red bell pepper chopped fine
3 c. cooked yellow rice (made yellow by adding 1/4 tablespoon of turmeric to the water plus a few drops of sesame oil)

In a large heavy sauce pan combine the soy sauce, sugar, water, and pineapple juice on medium low heat. Add chicken so they are evenly spaced on the bottom of the pan. There should be just enough liquid to cover them. If not add a little more water. Cover and simmer slowly for 45 min turning once. Do NOT boil. Turn heat off and let them set for 5 minutes. Spoon the rice evenly into a glass baking pan. Place the hot chicken into the rice and press them down slightly. Spoon some of the juice from the sauce pan over the chicken. Cover each one with a pineapple ring and sprinkle with green onions and red bell pepper. Place in a 325ºF preheated oven for 8-10 minutes. Serve hot.
