flour for dredging
salt and pepper to taste
2 lbs boneless chuck in cubes
1/4 cup oil
6 medium onions sliced
1 clove garlic finely chopped or minced
1 12 oz bottle beer
1 tbsp parsley
1 bay leaf
1/4 tsp thyme

Directions:
Directions:
Combine flour, salt and pepper. Dredge meat in seasoned flour; use a lot of flour. Heat oil in skillet, add onion and garlic and cook until tender, but not brown. Remove onions from skillet. Add meat and brown on all sides. Add more oil if necessary. Return onions to skillet. Add remaining ingredients. Cover and cook over low heat until meat is tender (about 1 1/4 hours). Cover with beer. Don't let boil.
