6 Medium Zucchini (You can also use Summer Squash or a Mix of Both)
2 tbsp Olive Oil
2 Medium Onions Chopped
2 Cloves of Garlic Chopped
Dash of Salt
Dash of Fresh Pepper
1/4-1/2 c of Freshly Grated Parmesan Cheese

Directions:
Directions:
Slice and remove the ends of the squash. Heat 2 tbsps of olive oil in a large skillet. Cook onions for 10 minutes over medium heat until they brown. Add the squash, salt, and pepper and stir occasionally. Cook for 10-15 minutes until browned. Sprinkle with the parmesan cheese just before servings.
