1 cup all-purpose flour
4 T. butter and 1 1/2 T. lard (each very cold)
2 1/2 to 3 T. cold water
1/2 tsp. salt
Pinch of sugar

Directions:
Place flour, salt, sugar and fat together and mix until the fat is broken into pieces the size of oatmeal flakes. It is not necessary for the blending to be perfect at this point. Add water and blend quickly. Press the dough firmly into a roughly shaped ball. It should just hold together and be pliable, but not too damp and sticky. With the heel of one hand, rapidly press the pastry by two-spoonful bits down on the lightly floured pastry board away from you in a firm quick smear of about 6 inches. This is the final blending of the fat and flour. Gather the dough again into a mass and knead it briefly into a smooth round ball. Sprinkle lightly with flour and wrap in wax paper. Place it in the freezer for about 1 hour until the dough is firm but not congealed, leave it for 2 hours or overnight in the refrigerator.
