2 1/2 to 3 lbs. chicken thighs
1/4 tsp. salt
1/2 of a 12-oz. can frozen lemonade concentrate, thawed
4 tbsp. brown sugar
3 tbsp. ketchup
1 tbsp. vinegar
1 tbsp. Sriracha sauce (hot chili sauce)
3 tbsp. honey
2 tbsp. cornstarch
2 tbsp. cold water

Place chicken in a slow cooker. Sprinkle with salt. In a medium bowl combine lemonade concentrate, brown sugar, ketchup, vinegar, Sriracha sauce and honey. Pour over chicken.

Cover and cook on low for 6 to 7 hours or on high for 3 to 3 1/2 hours. Transfer chicken to a serving platter; cover and keep warm.

For sauce, pour cooking liquid into a medium saucepan. Combine cornstarch and the cold water; stir into liquid in saucepan. Cook and stir over medium heat until thickened and bubbly. Cook and stir 2 minutes more. Spoon sauce over chicken. Serve with white or brown rice.

This is similar to sweet and sour chicken you get in Chinese restaurants. We cube the chicken after it is cooked and then mix it with the sauce. Great over rice. I also like to make Lemonade cookies with the leftover frozen lemonade.
