2 medium onions, chopped
2 lbs. ground chuck
2 T. olive oil
2 garlic cloves, minced
1/2 lb. fresh mushrooms
1 pkg. chopped spinach
2 tsp. Worcestershire sauce
1/2 tsp. each of nutmeg, oregano and tarragon
1/2 tsp. salt
Lemon pepper to taste
1/3 cup Parmesan Cheese
6 eggs beaten

Spray large skillet with cooking spray. Brown chuck, mushrooms and onions for 6 to 8 minutes. Add Worcestershire sauce, oregano, garlic, tarragon, salt and Lemon-Pepper to meat mixture. Drain spinach, stir into meat mixture. Push to side of pan. Pour eggs to other side and cook eggs until soft set. Gently stir meat and egg mixture together. Serve with Pico del Gallo or salsa and bread of choice

Summer of 2013 Bob and Barilynn when at Sea-Tac airport in Seattle waiting for a plane that was 4 hours late. Saw the restaurant "13 Coins" across the street and decided to eat there for the first time since 1977. The restaurant is such a standard in Seattle. Low and behold this recipe was still on the menu. The taste had not changed.
