1/4 c + 2 T flour
1/4 c + 2 T sugar
2 eggs
Jam or lemon curd

Directions:
Directions:
Pre-heat oven to 350º.

Whisk the eggs thoroughly, then add the sugar and whisk together until a thick cream. With a knife, stir in the flour lightly. Put into a well greased round cake tin (7" in diameter and 3" deep).

Bake about 30 minutes until toothpick comes out clean.

When cool, cut through and spread with jam, lemon curd or other filling.
