Pesto:
2 garlic cloves, peeled
1/4 tsp. salt
1/4 tsp.dried hot red pepper flakes
1 1/2 cups(lightly packed; about 1 1/2 oz.) fresh basil leaves, divided
1/4 cup pine nuts, toasted
1/3 c. freshly grated Parmesan cheese
1/4 c. evoo
Sandwich:
1 1/2 pound tomatoes, cut into 3/4" pieces
1 tbsp. balsamic vinegar
salt and pepper to taste
1 loaf ciabatta
1 8 oz, piece Gruyere cheese, rind trimmed and cheese grated
1 4 oz. wedge Brie cheese, sliced

Pesto:
Mash garlic, salt and red pepper flakes into a course puree.
Add 1 c. basil and pound until coarsely chopped. Add remaining 1/2 cup basil and pound until forms course puree.
Add pine nuts and pound just to break up.
Add cheese and oil and mash until nuts are coarsely ground and mixture is well blended.
Sandwich:
Preheat grill on high
Toss tomatoes with vinegar and season with salt and black pepper. Set aside and toss occasionally.
Cut ciabatta in half horizontally
Spread both sides with pesto, then top each with Gruyere cheese, then Brie.
For gas grill, turn one burner off and place Ciabatta halves, cheese side up over unlit side. This ensures it doesn't char too much.
Close hood and grill until cheese melts and bread is golden, about 10 minutes.
