Ingredients:  
1 can creamed corn
1 Spanish onion, finely chopped
1/4 cup butter
1 box corn muffin mix (Jiffy 7 1/2 oz. size)
1 egg beaten
1/3 cup milk
2 drops hot pepper sauce
1 cup sour cream
1/4 tsp. salt
1 cup grated sharp cheddar cheese (4 oz.)

Directions:
Directions:
Mix corn muffin mix, egg, milk, Tabasco, creamed corn and salt together. Put in 8 x 8 baking dish. Saute onions with 1/4 cup butter. Add sour cream and heat. Add half the cheese and blend. Pour over batter and sprinkle with remaining cheese.
Bake uncovered at 425º for 20 to 25 minutes. Let sit for 15 minutes.
