1 lb. each provisions: dasheen, plantain, eddoe, cassava, pumpkin, sweet potato, callaloo bush, green fig, etc.
1/2 lb. tomatoes, chopped
1 tsp. thyme, fine leaf
4 pegs garlic, chopped
2 coconuts, dried, grated
Corn Meal Dumplings (see recipe)
2 large onions, chopped
6 pimentos, chopped
1 Tbsp. seasoning salt
cayenne pepper and salt to taste

Directions:
Peel and cut provisions into thick slices. Add enough water to grated coconut and strain to make 2 cups coconut milk. Place all ingredients into a large pot. Add more water to cover contents, if necessary. Add salt and cayenne to taste. Bring to boil. Reduce heat and simmer for approximately 1 hour, or until provisions are soft and cooked and most of the liquid has evaporated.
Serves 8.
