2 pounds lean pork boneless loin - cut into 3/4-inch piece
1 large onion - chopped (1 cup)
2 medium stalk celery - sliced (1 cup)
2 cloves garlic - finely chopped
1 15 ounce can black beans - rinsed and drained
1 15 ounce can chunky tomato sauce
1 10 ounce can diced tomatoes and green chilies
1 cup water
1 1/2 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
Directions:
Mix all ingredients in 3 1/2- to 6-quart slow cooker.

Cover and cook on low heat setting 8 to 10 hours (or high heat setting 3 to 5 hours) or until pork is tender.

To Serve: Pass bowls of shredded Cheddar cheese, chopped avocado, sliced jalapeņo chilies, chopped onion, sliced ripe olives, chopped fresh cilantro and sour cream.
