1 pound dried red kidney beans
1-1/2 quarts water
2 medium onions, chopped
2 ribs celery with leaves, chopped
1/2 bell pepper, chopped
2 cloves garlic, finely chopped
1 ham bone (or bacon drippings)
1 pound or more large smoked link sausage
Optional seasonings salt, fresh ground pepper, fresh garlic, cayenne pepper, bay leaves, thyme and/or oregano

Soak beans in water over night or use quick soak method.

When ready to cook, add onion, celery, bell pepper, garlic, and ham or drippings.

Bring to a boil and simmer about 2 hours until beans get soft and start to thicken in the bottom.

Add sausage and desired seasonings during the last 30 minutes.

Serve with hot fluffy rice and a green salad. If desired, garnish with grated sharp cheddar cheese and chopped green onions and serve with jalapeno corn bread or French bread.
