4 ounces egg substitute or 2 eggs
One-half cup nonfat milk
1 teaspoon pure vanilla extract
1 cup sugar
1 cup solid canned pumpkin
2 cups unbleached flour
2 teaspoons baking powder
1 teaspoon baking soda
One-half cup Dutch processed cocoa powder
Three fourths cup mini semi-sweet chocolate chips

Directions:

Mix together the eggs, nonfat milk, vanilla, sugar and pumpkin in a large mixing bowl. Sift the flour, baking powder, baking soda, and cocoa powder into the liquid mixture and mix well. Fold in the chocolate chips. Pour into a tube pan sprayed with nonstick spray. Bake in a 350-degree oven for 40 minutes. Cool and cut into 16 bars.
