4 boneless, skinless chicken breasts
5 tbsp. pesto sauce
¾ c. fresh ciabatta breadcrumbs
¼ c. grated parmesan cheese
Finely grated rind of ½ lemon
2 tbsp. olive oil
Salt, pepper, and garlic powder
Vine tomatoes

Directions:
Preheat the oven to 425º F. Cut a deep slash into each chicken breast to create a pocket. Open the chicken breast and spread 1 tbsp. of the pesto into each pocket. Fold the chicken breast back over the pesto and place in an ovenproof dish. Mix the remaining pest with the breadcrumbs, Parmesan, and lemon grind. Spread the breadcrumb mixture over the chicken breast. Season with salt, pepper, and garlic power and drizzle with the oil.
Bake in the oven for about 20 minutes or until the juices run clear when a skew is inserted in to the thickest part of the meat. Variation: Serve with hot roasted vine tomatoes.
