1 medium onion chopped
1 stalk celery chopped
12 shiitake mushrooms chopped
3 gloves garlic chopped
1" fresh ginger peeled and chopped (optional)
3 T butter
3 T flour
1 bunch dandelion greens chopped
1 bunch arugula chopped
6 cups kitchen stock or chicken stock

In a large boiler saute onions, celery, mushrooms, garlic and ginger in butter. Once vegetables are becoming soft add the flour. Stir constantly till flour has coated vegetable forming a paste like consistence. Immediately add stock and stir till mixture is well blended. Bring to a soft boil and add dandelions and arugula. Simmer on medium heat for 15 minutes. This is my basic cream soup recipe. You can substitute many different leaf greens for the dandelions and arugula. Some that I've used are: garden sorrel, nettles, watercress, mustard greens, and chickweed. Be creative with what you have growing in the garden or in the kitchen.
