1 1/4 cups dry (or 3 cups cooked) pinto or kidney beans
3 cups cold water
1 tsp salt
1/2 to 1 lb ground beef (or chunks)
1/2 cup chopped onion
1/2 cup finely diced green pepper
1 can (16 oz) corn
1 can (16 oz) tomatoes
1 tsp chili powder
3/4 tsp salt
1 Tbsp flour
1/2 cup shredded sharp cheese

Directions:
To cook beans: In a large sauce pan place washed beans, cold water, and salt. Bring to a boil. Cover and simmer 2 minutes. Remove from heat and let stand 1 hour. Return to heat and simmer 1 hr & 15 min.

In skillet cook ground beef, onion, and green pepper. Drain off fat. Add meat mixture, corn, tomatoes, chili powder, and salt to beans. Simmer 20 minutes. Combine the flour with 2 Tbsp water and stir into stew. Cook & stir till thick and bubble. Stir in cheese.
