4 eggs
2 cups sugar
1 cup canola oil
2 cups Libbys pumpkin puree
BEAT THESE UNTIL FLUFFY
Mix together and Stir into the above mixture:
2 cups flour
1 tsp. salt
2 tsp. baking powder
1 tsp; soda
1 tsp. cinnamon
1 tsp. each of : nutmeg, cloves, ginger
Directions:
Directions:
Just fold dry ingredients into pumpkin mixture . Don't mix with a mixer as this can make a gummy cupcake.
For cupcakes: Fill cupcake 3/4 full and bake at 350 degrees for about 20-25 minutes.
For Sheet Cake: Pur batter onto a lightly greased cookie sheet and bake at 350 degrees for 25-30 minutes
CREAM CHEESE FROSTING
1/4 cup butter
4 0z.cream cheese
1 tsp. vanilla
1-2 cups powdered sugar
