2 small garlic cloves, crushed
1 small fresh red chili pepper, seeded and minced
2 tablespoons sugar
2 tablespoons fresh lime or lemon juice
1/4 cup each: rice vinegar and nuoc mam (Vietnamese fish sauce)
1 small carrot, shredded
1 small daikon radish or turnip, peeled and shredded

Directions:
Directions:
In a mortar, combine garlic, chili pepper and sugar. Pound with a pestle to a fine paste. Transfer to a bowl, and add lime juice, rice vinegar, nuoc mam and 1/4 cup water. Stir to blend. Add carrot and daikon. Adjust ingredients to taste.
