1/4 cup roasted peanuts
1 tablespoon peanut oil
3 garlic cloves, minced
1 teaspoon chili paste (tuong or tuoi)
1 tablespoon tomato paste
1/2 cup chicken broth or water
1/2 teaspoon sugar
2 tablespoons peanut butter
1/4 cup hoisin sauce
1 fresh red chili pepper, seeded and thinly sliced

Grind peanuts. Set aside. Heat peanut oil in a small saucepan. When oil is hot, add garlic, chili paste and tomato paste. Fry until garlic is golden brown, about 30 seconds. Add chicken broth, sugar, peanut butter and hoisin sauce; whisk to dissolve peanut butter. Bring to a boil. Reduce heat and simmer 3 minutes.

Divide sauce among single-serving bowls; garnish with peanuts and chili pepper. Serve warm or at room temperature.
