3 c. brown rice, cooked
1 onion, chopped
¼ c. soy sauce
1 c. carrots, chopped or grated
1 c. celery, chopped
1 egg
2 small pork chop or chicken breasts

Directions:
Directions:
Cut meat into small, thin slices. Stir-fry in a small amount of oil until tender. Add onion, carrots and celery. Stir fry until vegetables are tender, then break egg and scramble into vegetable and meat mixture. Add cooked rice to the skillet and mix vegetables, meat, and rice with soy sauce and stir until thoroughly combined.
