1 lb. ground chuck or ground beef
1 small can of refried beans
1 white or Spanish onion
½ c. of red wine
1 package of corn tortillas or prepared taco shells
1 c. of cooking oil
1-2 tomatoes
¾ c. diced black olives
1 c. avocado cut into small portions
lettuce if desired; chopped
4 c. of sharp cheddar cheese or extra sharp
1 c. sour cream
salsa (hot, medium or mild) your choice

Directions:

Prepare taco mix by browning your beef and drain the fat.
Add the can or some of the refried beans (the appearance of your mixture should be more meaty than beany) and stir. You can add some red pepper and salsa to the mixture for some added flavor. The mixture will be somewhat thick and this is when you will add some wine, not too much just enough to loosen the consistency of the mixture.At this point reduce the heat and occasionally stir.

Dice onions, tomatoes, lettuce, olives and place in separate bowls.
Put your cheese in a separate bowl. Cut avocado should be placed in a separate bowl but this would be the last item that I would prepare.

Put your cooking oil in a deep pan or skillet and heat. Once the oil is hot take your corn tortillas and place one at a time in the hot oil and with some tongs fold the tortilla in half and then fry them until they start to form a pocket. Remove from the oil and pat with paper towel. This method will take some time but the results are some outstanding tacos.

The preformed shells work great if you are in a hurry to eat but our favorite tacos are with the fried tortillas.

Pan up the taco mix unless you need to add a little more wine for consistency.
