2 whole skinned chicken breasts (cut into thin slices)
1/4 tsp pepper
1 cup sliced green onions w/tops
1 can sliced mushrooms (drain & reserve liquid)
1 1/2 cup chicken broth
3 cup hot cooked rice
1 1/2 tsp salt
2 T butter
1/2 cup dry sherry
1 cup fresh or frozen peas
3 tomatoes
2 T corn starch

Directions:
Directions:
Cook rice according to package. While rice is cooking, season chicken with salt and pepper, saute in butter until browned. Add onions and muchrooms. Continue cooking 2 minutes longer. Stir in sherry, peas and broth. Cover and simmer 20 minutes. Cut tomatoes into wedges and place on top of chicken mixture. Dissolve corn starch in mushroom liquid and stir into chicken mixture stirring frequently, about 5 mintes. Serve over bed of rice.
