1 whole chicken
½ c. celery, chopped
1 bell pepper, chopped
8 Tbsp. shortening
8 Tbsp. flour
½ tsp. minced garlic
2 Tbsp. Worcestershire sauce
1 tsp. cayenne pepper
1 can chicken broth
1 pkg. Ekrich smoked sausage, cut small
1 pkg. Ekrich Polka Kleisaba, cut small
Salt and Pepper to taste

Boil chicken, then debone, reserve broth. Make rue by putting 8 Tbsp. shortening and 8 Tbsp. flour in skillet. Cook over medium heat until very, very brown, stirring constantly. Just when you think it needs to cook 2-3 more minutes, add a chopped onion. Let cook for 2-3 minutes. Add rue to the chicken broth, add celery, bell pepper, and garlic. Add salt and black pepper to taste, Worcestershire sauce, cayenne pepper and can of chicken broth. Then add the chicken and sausage, cook 20-25 minutes, or until vegetables are done. Serve over rice. Add filet gumbo seasoning at the table, do not add when cooking, it makes the gumbo slimey.
