1 pkg salted cod bits
Couple of potatoes, cooked and mashed
1/2 cup fine bread crumbs
1 small onion chopped finely
Pepper
1 egg

Directions:
Directions:
Soak salted cod bits in cold water for 1-2 hours. Drain and soak again in cold water, rinse, cover with cold water and bring to a simmer. Careful not to over boil. Strain it, then mash it. Add the potatoes, bread crumbs, pepper, egg and onion. Mix up together and make into patties - not too thick. Put butter and a bit of olive oil in a frying pan. Make sure it is really hot before you add the fish cakes. Fry a couple of minutes on each side until lightly brown.
