1 lb dry red beans
2 c onion, chopped
2 stalks celery, chopped
4 cloves garlic, chopped
1 green pepper, chopped
ham hock
Frank's hot sauce
1 bay leaf
Lawry's & pepper to taste

2 c cooked, white rice
2-3 green onion, chopped

Directions:
Directions:
Put dry bean in large saucepan. Cover with water and bring to a boil. Remove pan from heat and let beans soak for one hour. Drain and rinse beans.

Return beans to pot and add remaining ingredients. Add 2" water, bring to boil. Reduce heat and cover; simmer for 1-2 hours.

Serve inside a ring a steamed white rice and sprinkle with green onion.
