10 MED. CARROTS, THICKLY SLICED
1 16OZ. CAN PINEAPPLE CHUNKS
1 C ORANGE JUICE
1 T CORNSTARCH
1 TSP. SALT
1/2 TSP. CINNAMON

20 MIN. BEFORE SERVING: COOK CARROTS IN 1" BOILING WATER TILL TENDER. ABOUT 15 MIN. DRAIN.

IN SM. SAUCEPAN, DRAIN LIQUID FROM PINEAPPLE & ADD ORANGE JUICE. IN SM. BOWL MIX CORNSTARCH, SALT & CINNAMON. STIR IN A FEW TABLESPOONS PINEAPPLE-ORANGE JUICE & MIX TO A SMOOTH PASTE.

HEAT JUICE, THEN STIR IN CORNSTARCH MIX. SIMMER, STIRRING CONSTANTLY UNTIL THICKENED. ADD PINEAPPLE CHUNKS & CARROTS. COOK OVER LOW HEAT, STIRRING CORNSTARCH TILL HOT & BUBBLY.
