Mom's Cinnamon Rolls Recipe

1/2 c butter, melted & cooled
2 c milk, scalded & cooled
1/2 c sugar
1 t salt
2 pkgs yeast, dissolved in 1/2 c warm water
2 eggs, beaten
6-6 1/2 c flour

Filling:

1 c butter, softened
2 c sugar
6 t cinnamon

3 T brown sugar
3 T dark corn syrup

Glaze:

1 cup sifted 10X (powdered) sugar
3 T evaporated milk
1/2 t vanilla
pinch of salt

Directions:
Stir sugar & salt into milk, mixing until dissolved. Add yeast/water mix & eggs. Gradually add 3 cups flour. Add melted butter. Add additional flour to make soft dough. Place dough on floured board, cover & let rest 10 mins. Knead dough about 10 mins or until smooth & elastic. Place dough in large greased bowl. Grease top of dough, cover with damp cloth & let rise until double in bulk, about 2 hrs. Punch down and let rise again 45 minutes. Meanwhile, make filling.

Divide dough in half. Roll out each half into a 15 X 12 X 1/2" oblong. Spread each with half cinnamon/sugar filling. Roll up each from long side, jelly roll fashion. Cut into 1/2" slices (at least 16 slices from each roll). Grease 2 13 X 9 pans & arrange rolls, cut side up, in pans. Sprinkle with brown sugar and drizzle with corn syrup. Cover and let rise 1 hour.

Bake in preheated 375º oven for 20 minutes. Remove from oven and invert pans onto cookie sheets; leave 2 mins. Glaze when cool.

I often divide the dough & filling into 4 equal parts to make 64 smaller rolls. Use two 13 X 9 pans (24 rolls per) and one 11 X 7 pan (16 rolls) and 1 1/2 times the glaze.
