Ingredients: 4 slices bacon, minced 1/3 c olive oil 1 large onion, diced 1 large carrot, peeled & diced 2 stalks celery, diced 2 medium potatoes, peeled & diced 1/2 lb green beans, cut in 1 in pieces 8 c water 8 beef bouillon cubes 1/2 small head cabbage, shredded 10 oz bag spinach, chopped 2 medium zucchini, diced 1 t garlic salt 1 t basil 1 bay leaf 2/3 c elbow macaroni 6 oz tomato paste 15/5 oz can kidney beans 14.5 oz can diced tomatoes 15.5 oz can cannelloni beans S & P to taste Parmesan
3 medium potatoes, peeled & diced 1 c+ beef broth

Directions:In large pot over medium heat, cook bacon until fat is rendered. Add olive oil, Cook onions, carrots, celery, potatoes & green beans until vegetables are soft & lightly brown, about 20 mins, stirring occasionally.
Add water, bouillon cubes, cabbage, spinach, zucchini, garlic salt, basil & bay leaf. Bring to a boil. Reduce heat to medium low, cover & simmer for 1 hour.
Meanwhile, place 3 medium potatoes in a saucepan & add beef broth. Bring to a boil & cook until tender. Puree potatoes to the consistency of a thick cream, adding more beef broth as needed.
Stir beans and macaroni into main soup pot. Add potato puree & tomato paste and cook 30 mins more.
Season to taste with salt & pepper & serve with Parmesan. |
