Ingredients:  
1 lb. low fat ground beef
salt, pepper, Italian Seasoning, pinch of dry mustard
2 eggs, beaten
crushed crackers-- add about 1/2 cup, then mix and add more as needed to make meat loaf stick together
Ketchup or tomato sauce (again, this is an "eyeball" amount-- add what feels good to you, then more to make sure it is moist.)
1/4 cup chopped onion-- or more if you like onion
1 -2 tsp. minced garlic

Put all ingredients in a fair sized mixing bowl and mix. (With hands after you've washed them thoroughly).
Put in a greased loaf pan and bake at 350º F for 45-60 minutes.

Mine usually needs to be spooned out rather than cut in slices as I like it pretty moist.
