3 ripe tomatoes, peeled
1/2 c each: onion, green pepper, cucumber
4 T olive oil
2 T wine vinegar
2 cloves garlic
2 t salt
4 c tomato juice

Diced onion, green pepper, cucumber, celery
croutons

Directions:
Directions:
Combine top ingredients in blender & blend until smooth. Add 4 cups tomato juice. Place in glass bowl & chill for at least 4 hours. (If too thick, add some ice cubes & leave out of the refrigerator for a bit, removing any unmelted ice cubes before serving).

Serve in individual bowls with diced vegetables & croutons for each guest to add as desired.
