3/4 c butter
2 lbs onions, thinly sliced
1 1/2 t paprika
6 c beef broth (or combo broth & consommé)
1/2 c vegetable oil
3/4 c flour
3/4 t celery salt
S & P to taste
1 c dark beer

Parmesan
mozzarella or Swiss cheese

Directions:

Melt butter in large saucepan. Add onions and cook until soft. Stir in paprika. Add beef broth & bring to a boil. Meanwhile, heat veg oil in a small skillet & add flour to make a roux. Cook over low heat, stirring frequently, until thickened & lightly browned (about 10 mins). Gradually add roux to boiling stock, stirring constantly. Stir in seasonings & simmer, covered, for 2 hours. To serve, place croutons in oven-proof bowl & ladle soup into bowl. Sprinkle with Parmesan and mozzarella/Swiss. Place under broiler until bubbly & browned.
