Mom's Chicken Tetrazzini Recipe

1 can sliced mushrooms (drain and save the broth)
1 small onion chopped
4 tablespoons butter
1 1/2 cup chicken broth
1 cup heavy whipping cream
1/2 teaspoon salt
dash pepper
1/2 cup dried vermouth or additional chicken broth. I like chicken broth.
1 cup graded parmesan cheese
1 cup cheddar cheese
2 cups cooked chicken cubed
Thin spaghetti noodles
flour

Directions:
Directions:
Cook onions, butter and mushrooms.

In another pot I make the spaghetti noodles.

Stir in flour to make a rue

Add 1 1/2 cup chicken broth, heavy whipping cream and liquid from the mushrooms.
Cook until thickened.

Take off of heat add salt, pepper additional chicken broth or vermouth.
Add cheese (I save some of the cheddar cheese for on top)
Mix in chicken.

Layer noodles, sauce mixture into a 13 x 9 casserole dish.

Bake at 350 degrees for 45 to 55 minutes.
