4-5 Chicken breasts, cut into small pieces
2 Tbsp. butter
½ medium onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Ro-tel tomatoes, drain slightly
¾ c chicken broth
1-3 tsp. chili powder
Tostitos Restaurant Style Tostitos chips
1 lb. grated Cheddar cheese

Brown chicken in a skillet. Set aside. Saute onion and bell pepper, set aside. In a large bowl, combine cream of mushroom soup, cream of chicken soup, Ro-tel tomatoes, chicken broth, chili powder, cooked chicken, onions and bell pepper. Mix well. In a 9 x 13 casserole dish, crumble thin layer of tortilla chips to cover bottom. Spread chicken/soup mixture evenly over chips, using large spoonfuls. Crumble another thin layer of chips to cover soup mixture, repeat layer of chicken and soup mixture. Spread cheese on top.Bake at 350º 30-45 minutes, until hot and cheese is melted.
Serving Options:
To each individual serving add: Picante sauce, sour cream, lettuce, tomatoes
