3 lbs round steak, about 1 1/2" thick
1/3 cup flour
1 1/2 tsp salt
1/4 tsp pepper
1/4 cup cooking fat
3 medium onions
1 green pepper, sliced
1 cup celery, cut in pieces
1 1 /2 cups Burgundy
1 cup tomato juice

Directions:
Directions:
Drudge steak in flour to which salt and pepper have been added. Pour with meat clever or edge of saucer. Brown on all sides in hot cooking oil fat. Add onions, green pepper, celery and 3/4 cup wine. Cover and bake in a 350º F oven for 1/2 hour. Add remaining wine and the tomato juice and continue baking, covered for approximately 1 hour longer.
