1 envelope yeast
1/4 c. lukewarm water
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. saffron
3/4 c. lukewarm water
1/2 c. soft butter
1/2 c. sugar
2 egg yolks
1/4 c. sour cream
4 c. all-purpose flour
1/2 tsp. cardemom
1 1/2 c. raisins soaked in wine or water
3/4 c. sliced almonds
1 beaten egg white with 1 tbsp. water

Directions:

1. Dissolve yeast and 1 tsp. sugar in 1/4 c. lukewarm water.
2. Steep saffron in 3/4 c. water.
3. Beat butter, sugar, egg yolks and sour cream together.
4. Add yeast, saffron and 2 c. of the flour and beat together.
5. Add raisins, 1/2 c. of the almonds and enough flour to form a soft dough.
6. Knead well until dough loses stickiness. Cover, let rise until it doubles.
7. Punch down and make a long roll (about 3 feet). Form large pretzel.
8. Cover, let rise until it almost doubles again. Pre-heat oven to 400º F.
9. Brush with egg white and water mixture. Sprinkle with remaining almonds.
Bake at 400º F. for 10 min. then reduce to 350º for another 30 min.

This rich coffee bread is a traditional Latvian birthday "cake", shaped as a huge pretzel and decorated with candles. Served also on other family anniversaries. Nice for Christmas. Though not traditional, dried cranberries can be used.
