30 oz. pitted dates, 2 lb. mixed candied fruit such as citron, pineapple, cherries or to your taste, 2 lbs. pecans, 1 lb muscat raisins, 1 lb. currents, 1 lb. raisins, 1 1/3 c. sherry, 2/3 c. light corn syrup, 1 1/3 c. butter, 2 c. sugar, 1/2 tsp. cloves, 2 tsp. cinnamon, 1 1/2 tsp. nutmeg, 1/2 tsp. mace, 8 eggs separated, 4 c. sifted flour, 1 tsp. salt, 3/4 tsp. baking soda, 1 1/4 tsp. cream of tartar, blanched almonds, candied cherries for decoration, sherry or brandy.

Cut fruit in fairly large pieces and put in large bowl with raisins and currents, sherry and corn syrup. Mix thoroughly. Let stand 24 hours, stirring 3 times. Cream butter and sugar until fluffy; add spices and egg yolks. Add sifted flour, soda, salt and cream of tartar. Fold in egg whites beaten until stiff but not dry. Add fruit mixture and mix thoroughly. Bake in 2 9 inch tube pans or 4 loaf pans that are 9x5x3 inches lined with 2 layers greased brown paper at 275º. Allow 4 hours for the tube pans and 3 hours for loaf cakes. When brown, cover tops with brown paper. Remove from oven and cool. Pour sherry or brand over tops, if desired. Wrap in cheesecloth and store in air tight containers. Will keep indefinitely.

Mom would make this fruitcake every year and give it away as gifts. It really does keep for a long time if thoroughly soaked in brandy. This cake made me a fan of fruitcake.
