2 - 2 1/2 lbs. skirt steak
Juice of 6 - 7 limes or around a 1/2 cup
6 cloves of garlic, minced
1-2 med. onions, sliced thickly
1 tsp. cumin
2 tsp. jalapeņo peppers
2 T. oil
Salt and pepper to taste
Lime wedges
Flour tortillas, warmed

Place steak in a ziplock bag. Pour mixture of oil, cumin, peppers, garlic and onions over meat. Marinate at least 8 hours preferably overnight. Remove from the refrigerator 45 minutes before cooking so that the meat is at room temperature. On an outdoor grill, fire up enough charcoal to form a single layer of coals or use a gas grill. Place steak over fire, place onions a little to the side, where they will get less heat. Grill steaks to med-rare (about 5 - 6 minutes on each side). Turn onions occasionally, removing when they are soft, brown and crispy on the edges. Allow steak to rest for 5 - 10 minutes before slicing. Place sliced steak, grilled onions and lime wedges on a large platter. When serving, provide sour cream, Pica del Gallo, flour tortillas, cilantro and Guacamole. Cut meat on a 1/4 to 1/2 inch slant
