MOM'S BANANA PUDDING Recipe

2 cups sugar
2 cups flour
3 cups milk
1/4 tsp. salt
3 eggs, separated
2 tsp. vanilla
Vanilla wafers-- about 1 box
2-3 bananas

Directions:
Directions:
Blend sugar, salt and flour in top of double boiler. Add milk and put over hot water on stove.
Beat 3 egg yolks and add to sugar, flour, milk mixture. Cook, stirring constantly until thick. Remove from heat and partially cool. Add the vanilla and mix.

Layer vanilla wafers --crush into crumbs if you desire or just leave whole and cover the bottom of the pan in a 9 x 13 pan; slice bananas over the wafers, Pour the pudding on the top.
Beat the 3 egg whites into stiff peaks, adding sugar and vanilla to taste. Spread on top of the pudding and broil until brown (about 2 minutes. Watch carefully.)

Mom never used measuring cups or spoons, so we had to ask her to do so in order to duplicate her recipe. She used a large serving spoon heaped up to measure the flour and it always turned out wonderful.
