Rosemary-Herb Roasted Turkey Recipe

1 thawed, frozen or fresh turkey
1 large lemon, sliced
1 large onion, cut into wedges
2-3 fresh thyme sprigs
2 Tablespoons vegetable oil
Dash of rosemary

Directions:
Directions:
Preheat oven to 325º. Remove neck and giblets from body and neck cavities (these may be cooked and reserved for use in stuffing or gravy, if desired). Rinse turkey inside and out; pat dry with paper towels. Lift wing tips up toward neck, then tuck under back of turkey. Place lemon, onion and thyme inside body cavity Tie ends of legs together with cotton string. Place turkey, breast side up on rack in roasting pan. Brush skin with oil and sprinkle with rosemary and salt and pepper. Roast turkey for 3-4 hours or until done (meat thermometer registers 180º in thickest part of thigh and juices run clear). Remove turkey from oven; let stand 20 minutes. Carefully remove turkey from pan. Cut string from legs and remove ingredients from inside. Carve and serve.

Cooking time will vary on the size of the turkey.

If you want to stuff the turkey with dressing you can place the lemon, onion and thyme in the neck cavity and the stuffing in the body cavity.
