Ingredients: 2 lbs. boneless chicken cut up into 1 inch pieces 2 cups flour 1 tsp. baking powder 1 egg 1 cup Panko bread crumbs 2 cups special K crushed 1 cup captain crunch crushed (optional) 1-12 oz. bottle of beer 2 cups vegetable oil

Directions:Mix flour, baking powder, egg, beer to make batter. Should be consistency of pancake batter. Mix special K, captain crunch and panko bread crumbs. Coat chicken with batter then toss in crumb mixture to coat. Heat vegetable oil to 325 degrees and place chicken in hot oil. Cook about 10 minutes each side golden brown. Cut open a piece to make sure chicken is cooked through. Drain on paper towels then toss with hot sauce. Serve with blue cheese dressing and celery. Hot sauce recipe is under sauces in this book. |
