12oz sweet Italian sausage links
1 tbsp. olive oil
2 cups onions separated into rings
2 large cloves of garlic finely minced
3 lbs. of chicken parts –drumsticks, wings, thighs, or chicken breast
1 28oz can crushed tomatoes
1-1/2 tsp. basil
1 large bay leaf
1 tsp. oregano
½ tsp. salt
½ tsp. fresh ground pepper
1 jar roasted peppers
Parmesan cheese

With folk tines pierce sausage in several places. In large skillet heat olive oil till hot. Add sausages.
Cook over low heat until brown on all sides. Remove to paper towel: reserve. Pour out about all but 3 tablespoons of fat from skillet. If necessary add olive oil to make 3 tablespoons.
Add onions and garlic. Sauté till onions and garlic are lightly browned, stirring to loosen particles from bottom of skillet. With a slotted spoon remove onions. Add chicken to skillet a few pieces at a time until brown on all sides. As chicken browns remove from pan and reserve. Return chicken to skillet skin side up. Arrange sausage and onions over and around chicken. Pour tomatoes over all. Add bay leaf, basil, Oregano, salt, and pepper. Simmer covered for 35 or 40 minutes basting occasionally till chicken is done. Cut roasted peppers into strips and; add to skillet. Increase heat and cook uncovered until liquid is slightly reduced. Remove from heat. Remove bay leaf and serve in shallow bowls topped with parmesan cheese.
