6 boneless, skinless chicken breast halves, cut into small chunks
salt, pepper, garlic powder, curry powder & flour
½ cup butter
½ lb. Fresh mushrooms, thickly sliced
½ cup Amaretto
Grated rind and juice of 1 lemon
1 ½ cups chicken broth
1 T. cornstarch
Patty shells or brown rice

Directions:
Directions:
Place items 2nd in list in ziplock bag and coat chicken chunks with mixture. Heat butter in large skillet and brown chicken. Add mushrooms, Amaretto, grated rind and juice of 1 lemon and simmer 5 minutes. Mix chicken broth and cornstarch, stir into skillet mixture until it bubbles and thickens. Season to taste with salt. Spoon into patty shells or over rice. Garnish with parsley and diced tomatoes if desired.
