12 cups peeled tomatoes, chopped
2 cups chopped green pepper
3 large onions, chopped
6 cloves garlic, minced
7 jalapeņo peppers (mild)
1 cup cider vinegar
12 oz. tomato paste
3 T salt
3 T sugar

Directions:
Directions:
Mix all ingredients in large Dutch oven. Cook and simmer until it is thick.
Make sure your jars are clean and dry. Have canning rings ready. Place canning lids in a pan and cover with water. Bring to a boil.
Pour cooked salsa into a jar, clean rim of jar, place hot lid on top and seal tight with the canning ring. Repeat until all your cooked salsa is in jars. Set aside. As the salsa cools, you will hear the lids pop as they seal. Label and store in a cupboard up to a year.
Recipe makes approximately 6-8 pints.
