3 1/2 c. water
2 1/2 cubes margarine
1 1/2 c. sugar
2 c. mashed potatoes
2 pkg. dry yeast
1 c. warm water for yeast
4 eggs, beaten
2 1/2 c. powdered milk (dry)
2 tsp. salt
1 T. vanilla
14-16 c. flour

Directions:
Melt margarine in hot potato water. Add sugar and potatoes, stir until blended. Soften yeast in water; add to cooled potato mixture and stir. Add eggs, powdered milk, salt and vanilla. Add enough flour to make a soft dough. Allow to raise until double, about 4-5 hours. Roll out dough on lightly floured board to 1/2 inch thick and cut into doughnut shapes. Place on aluminum foil to raise again until double in bulk. By the time all the doughnuts are cut, the first ones are ready to cook. Fry in hot, deep oil, about 375º until golden brown. Drain on absorbent paper. Frost or glaze.

This was a family tradition at Halloween. Mom would cook the doughnuts and us kids would frost them. We would give them out to the neighbors for Trick-or-Treats. Halloween would not be the same without donuts and cider.
