1/2 cup carrots, diced
1/2 cup celery, diced
4 1/2 cups chicken broth
1/2 cup zucchini, diced
2 tbsp butter
2 tbsp onion, finely chopped
1/2 cup flour
1 cup sharp shredded Cheddar cheese
1/4 cup Parmesan cheese
10 drops hot sauce
salt to taste
1/4 tsp white pepper
1/2 cup California dry white wine
1 1/2 cups cream
parsley, chopped

Directions:
Add carrots and celery to 1 1/2 cups chicken stock in a 1-2 quart saucepan. Bring to boil; cover and simmer 10 minutes. Add zucchini and simmer another 5 minutes. Melt butter in 4-5 quart saucepan over medium heat; add onion and saute until transparent. Blend in flour and cook 5-7 minutes, stirring constantly, being careful not to brown. Slowly stir remaining cups of chicken stock into flour mixture, whisking over low heat, until sauce thickens. Add cheeses and stir until melted. Season with hot sauce, salt, pepper and wine. Stir in cream prior to serving. Garnish with chopped fresh parsley.
