1/2 stick butter
2 onions, chopped
2 units concentrated chicken stock, dissolved in 3 cups hot water
1 teaspoon salt
black pepper to taste
1/2-3/4 cup toasted chopped pecans
fresh parsley, coarsely chopped

Directions:
Directions:
In the butter, saute the onions over low heat until tender but not browned, about 8 minutes. Add chicken stock, salt, and pepper, and bring to a boil. Add couscous and stir. Remove from heat and cover; allow to sit for 10 minutes. Fluff with a fork and stir in the nuts and parsley. Serve warm.
